自制中秋月饼

做的是冰皮月饼,不用烘烤,简单易学。

recipe:

Ingredients

150gm cooked glutinous rice flour (kao fen)
250gm icing sugar (sugar powder)
50gm “crisco” shortening
1/4 teaspoon banana essence
1/4 teaspoon colouring
150gm water (boil)
1/2kg (or less) lotus paste
50gm melon seeds

Method

1. Mix glutinous rice flour with icing sugar, shortening, then add in essence, colouring and water and knead. Leave it for 20 minutes.

2. Divide dough into 20g each.
Press each dough flat and wrap with paste ball each 25g.

3. Dust with little flour before putting into mould, press firmly.
Knock out lightly onto hand.
