星期六晚的烤羊排,是看了第5频道The Essence of Emeril学的;做法非常简单,只是油烟有点大。
Ingredients:
2 oranges, squeezed to get juice and some zest;
4 cloves garlic, chopped roughly;
fresh rosemary leaves;
fresh mint, chopped;
a few lamb chops;
3 tablespoons of Essence seasoning(recipe follows);
balsamic vinegar;
3 tablespoons olive oil
Essence seasoning:
2.5 tbsp paprika
2 tbsp salt (这里我只加2小茶匙的盐)
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
Combine all ingredients thoroughly.
Directions:
1. Make the marinade: squeeze the orange juice in a bowl, add a bit of grated orange zest, add the chopped garlics, rosemary leaves (remove from the stems), chopped mint, a bit of freshly ground black pepper and salt to taste. Whisk the whole mixture, use this to marinate the lamb chops in fridge for 30 mins. Lay the rosemary and mint on top of each chop.
2. Preheat a grill to medium. drizzle olive oil and sprinkle Essence over the lamb chops. Place on the grill, 4 to 5 mins per side. Turn chops over, lay the rosemary and mint on top of each chop.
3. When at desired temperature, remove from grill and drizzle with balsamic vinegar.
恩,很好吃,就是羊排有点贵。。。那个Essence seasoning也很好用,用它来炖牛肉 (试过两种做法:Emeril's Beef Stew; Onion and pepper smothered round steak。老公超爱吃~)也很香很浓;做法非常简单,有兴趣的童鞋可以去google哈。
星期天的晚饭,是照一本娘惹风味的书上做的,做法简单味道超棒。因为是吃海鲜,不是很饱。。。做了一道超级简单的饭后甜点,从电视上Jamie Oliver的节目上学来的。
因为是娘惹风味,用到很多小葱头,这就由老公来着手进行,嘿嘿。先上图再上做法:辣椒豆酱炒拉拉(海瓜子)和椰香酸辣虾。
辣椒豆酱炒拉拉(海瓜子)
材料:
500g拉拉,浸水里30分钟,沥干
3大匙油
A(舂烂):
1.5大匙豆酱(我用稍微少一些,因为咸);
6辣椒干,浸软;
10粒小葱头,去皮;
3瓣蒜头,去皮;
3cm姜,剁碎
B:
1条红辣椒,切片;
3粒小葱头,去皮,切片;
2大匙姜丝
调味料:
2小匙糖;
1小匙黑酱油;
1/2小匙胡椒粉
100ml水
做法:
1. 烧热油,爆香A料,加入拉拉炒至半熟(壳半开)。
2. 加入B炒香。
3. 最后加入调味料炒匀,盖起来焖一下,盛起趁热享用。
这道菜做过三次,每次都觉得拉拉不够吃,呵呵。
椰香酸辣虾
材料:
600g中虾;
2大匙油,3条青辣椒;
1粒西红柿,切块;
1粒洋葱,切块
A(舂烂):
2支香茅 (lemongrass),5条红辣椒;
5条辣椒干,浸软;
150g小葱头,去皮;
5瓣蒜头,去皮
B(拌匀):
1.5 小匙咖喱粉(煮鱼用的咖喱粉);
1/2大匙黄姜粉 (turmeric powder);
1大匙辣椒粉
1/2大匙芫茜粉 (coriander powder)
调味料:
1/2小匙盐,1小匙糖;
100ml浓椰酱(我只放少量);
200ml水,加入50g阿三膏 (tamarind pulp),挤汁(我没挤汁,直接加入半小匙)
做法:
1. 烧热油,爆香A料,加入B料继续炒至香。
2. 加入虾,青辣椒,西红柿和洋葱炒匀。
3. 加入调味料煮滚,试味,盛起享用。
如果不想吃到捣碎的香茅,先将虾和青辣椒、西红柿、洋葱摆盘,再淋上适量的咖喱汁就好。因为吃的都是海鲜,不是很饱。吃一两片巧克力甜点,就饱了^^
Chocolate dessert by Jamie Oliver
Ingredients:
200g dark chocolate (70% cocoa solids), broken into small pieces; 150g unsalted butter; 1 pack biscotti (我用消化饼), broken into small pieces; some maple syrup; a handful of mixed nuts (brazil nuts, foisted almonds; hazelnuts), chopped; cherries, chopped.
Directions:
1. Melt the dark chocolate and butter over boiling water, add a bit of maple syrup too add in sweetness.
2. In the mean time, broken the biscotti, chopped the nuts and cherries, mix them together.
3. Pour the melted chocolate mixture over, mix everything thoroughly so they are all coated with chocolate.
4. Use any big bowl or tray, lay a clean film over, pour the mixture and press the top to make it flat. Put into fridge for 1 hr, slice and enjoy.
