what should I do?

My friend owns a company, and she was facing some financial difficulties previously. So she borrowed some money from me, and write a company cheque to me with the amount she owes me. Therefore, I didn't request her to write a receipt for the loan.

One month later, she let me deposit the cheque into my account. However, the cheque is returned due to the insuffient amount remaining in the bank account.

In this case, is there anything I can do? I mean, for example I sue her or anything like that?

Yes, you can sue her. The lack of a return agreement is no but to your claim.
