how to do fillets?
I've had 2 lousy experiences trying to fry fillet, one dory and the other eel.
Turns out that oil or butter aren't good. Is olive oil suppose to be *the* oil for doing fillets? Can anyone also recommend what fillets are good for frying?

因为肉厚。:P
因该不是油的问题。。。
炸之前,过上一层面糊活着面包粉应该会有帮助。还有就是多放点油。第一次翻面之前要多炸一点时间,不然很容易破的。
